Fresh Pasta
Making fresh pasta may seem like a Mount Everest type of activity, but trust me when I say it is super easy and really delicious! The first time I attempted it, my daughter and grandson joined in on the fun. Our pasta wasn’t the best texture on the planet, but it was tasty and my grandson said if I were on YouTube, he’d give it a “thousand likes and a subscribe,” so in modern-day kid speak, I’d call it a success!

The trickiest part of making pasta is rolling it out thin enough and of course that is subject to taste. Other than that, it really is easy. Let’s jump right into it, shall we?
WHAT YOU’LL NEED
1 1/3 cup flour (AP is fine)
2 eggs
1 tbsp olive oil
pinch of salt
MAKING THE DOUGH
• Dump the flour on your clean counter, and use the measuring cup to make a well in the center
• Add the two eggs (you can whisk them prior to, but I like putting them in and whisking them in the well). Whisk eggs, adding flour to them slowly, until the mixture become hard to stir with fork, then switch to a pastry knife (if you have one - or use clean hands) & mix until a dough forms.

• Knead the dough for at least 10 minutes. This is so important. I rushed it the first time and the pasta didn’t have the right texture. Think of it as a workout with a delicious payoff at the end! Knead until dough is smooth. Form into a ball and cover with plastic wrap for about 15 minutes to allow it to rest.

• Sprinkle counter lightly with flour. Using a rolling pin, roll dough into sheets to your desired thickness. I like mine thin, but you can experiment with this. Hang sheets to dry for about 15 -20 minutes. A pasta rack is ideal for drying, but use your imagination. The first time we made pasta, we hung them over a broom handle. Allow sheets to dry for 15 minutes.

• Cut pasta. If you don’t have a pasta cutter, simply fold your sheets into thirds and use a chef’s knife to cut into strips. Let strips hang to dry for about 1 hour.

COOKING THE PASTA
• In a saucepan, bring water to boil & add olive oil and salt. Add pasta to boiling water and boil for about 8 minutes or until al dente. Steal a piece to taste test.

• Serve with your favorite pasta sauce and enjoy!
